It's a great low fat desert, this is the recipe:

4 cups low-fat milk
2/3 cup short-grain rice
2/3 cup maple syrup
1/4 cup raisins
1 tsp. vanilla extract
1/4 tsp. salt
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg

Combine the milk, rice, syrup and raisins in a saucepan. Bring to a boil over medium heat, stirring frequently. Reduce heat to low; cook 50 until rice is tender and mixture is creamy, stirring occasionally. Remove from heat, and stir in vanilla, salt, cinnamon, and nutmeg.

It's very easy to make rice pudding and it has under 200 calories. This recipe is actualy from Vermont, I think that in the rest of the country we use sugar...ok, it's better to use maple syrup if you're on a diet. Almost every country has a rice pudding, let's face it!

Thanks for the recipe, it is interesting that even something as simple as rice pudding can vary from place to place. I have never come across rice pudding made with maple syrup or with raisins, I don't think I would like it with maple syrup but I will try adding raisins. The recipe I'm used to is very simple

3-4 level tbsps of rice
2oz (50g) sugar
1pt (568ml) milk
ground nutmeg

wash rice in sieve under tap
put in greased ovenproof dish with sugar and milk
sprinkle nutmeg on top
bake for 2hrs-2hrs30mins at 150C stir once or twice.

I like rice pudding, it is easy to make and very satisfying. I have never tried it with maple syrup, I think I will give that a miss as I don't like maple syrup. At school we used to have it with strawberry sauce but I like it just as it is. Thanks for the recipes, I am going to make some rice pudding today, we haven't had it for ages

I love rice pudding! Thank you both for sharing the recipes.
My mom used to cook me rice pudding a lot when i was little. Now i do it myself and i'm glad to see i'm not the only one :)

I used to love rice pudding too.. as a kid i wanted to eat it everyday.. but now i think i got sick of it or something, i can't enjoy it that much anymore. I think it's because i ate to much of it in the past..
